Our strength is our short production chain: our products are obtained from fresh milk, almost always milked a few minutes prior to making the cheese. 90% of the ingredients used for feeding the cows, are produced at our factory, which is crucial for a genuine production. The latest generation equipment guarantees maximum safety, but the production uses traditional recipes without thickeners, preservatives and chemical dyes. Our production, a result of years of research and experiments, is completely artisanal. Our cheeses are manufactured using raw milk, an authentic expression of best gastronomic traditions. This manufacturing process preserves the milk’s organoleptic and nutritional properties, and maintains its physio-chemical and microbiological properties.
