It’s a cheese made from sheep whole milk. The curd compact, and milky white. The crust is white as well, with a wrinkly surface imprinted from the basket, in which the tuma is placed and hand-pressed to remove the serum.
HOW TO SERVE
Tuma is used as filling for ravioli and flat-bread pizza. Excellent as an appetizer, in slices and fried in hot oil.
